Date Caramel

I had heard that dates are a great substitute for caramel, a handy bit of knowledge for vegan recipes. I was a tad skeptical, but I wanted to try it out. These do not disappoint! Jonathan loves them too! They are so sweet and gooey and decadent. Definitely worth a try! 

Vegan Caramel Truffles
1 lb of dates, seeds removed
peanut butter
coconut oil
dairy free chocolate
sea salt

Blend dates in food processor, getting them as smooth as possible - adding a bit of water helps smooth them out. Mix in a bit of sea salt. Roll into bite sized balls, place on baking sheet and freeze. Once firm, coat in a thin layer of peanut butter. Freeze again. Melt chocolate and coconut oil in a bowl and dip the balls into the chocolate. Drizzle with more chocolate or a sprinkle of sea salt if desired. Freeze again. Once firm, they are ready to eat!
